Yup. That’s right. The plain ol banana bread has come of age in this modern world. The baking bug bit me again yesterday. I went into the kitchen and automatically started getting out the ingredients for some cranberry white chocolate oatmeal cookies, got the bowl out and realized that I had some rotten bananas in the freezer that I needed to get rid of mostly because they are gross. Of course when I opened the freezer I noticed the gallon of raspberries that I had picked a few days before and an idea was born. A delicious idea.
So the finished product? Amazing, dessert or breakfast.
Here’s the recipe I used :
Mix 1 cup sugar with 1/2 butter in a large bowl
Mix in 2 large eggs, 3 medium mashed bananas, one tablespoon baking soda, a sprinkle of vanilla and some salt
Sift in 2 cups of flour, and 1/2 cup of milled flax seed (for extra healthyness)
And finally, stir in one cup of raspberries.
Bake in a greased 5×9 pan at 350 for 30 minutes
Cool and top with cream cheese frosting (for lesser healthyness)
